Bok choy, pak choi, or pok choi is a type of Chinese cabbage. Chinensis varieties do not form heads and have green leaf blades with lighter bulbous bottoms instead, forming a cluster reminiscent of mustard greens. Siew Pak Choy can be lightly boiled, steamed, stir-fried, combined with other greens and used in soups. The stems and leaves are light green, juicy and tender.
